Despite its minimalistic, decidedly modern signboard glowing in power blue, Minced Pork Bros serve a very traditional bowl of bak chor mee. The auntie/chef is kind enough to check with me the level of black vinegar sauce we prefer. We tried a dry and soup version. In the dry version, the sauces are mixed well enough to present a well balanced texture of mee pok, fish cake slices, minced meat bits, meat balls, fried flatfish bits and pork lard crisps. It is quite a tasty dish. The soup version has almost the same ingredients but with the addition of a handmade fish meat dumpling. The noodles, like the dry version, is not overcooked. The soup is savoury, with a hint of sweetness. The minced pork looks fresh. Minced Meat Bros is a good bak chor mee stall to try out when you are at the Old Airport Road Food Centre.
