Jin Fried Rice is a fried rice stall at Old Airport Road Food Centre, specialising in wok-fried rice dishes that showcase the elusive wok hei (breath of the wok). The stall is known for its smoky, well-seasoned fried rice cooked over high heat, with each grain of rice separated and coated in a savoury blend of soy and aromatics. Its presence at one of Singapore's most competitive food centres speaks to the quality of its wok skills. The menu features a variety of fried rice options, including the signature salted fish fried rice, belacan fried rice, and chicken fried rice, each cooked to order with fresh ingredients and a generous hand with the wok. Should’ve known better not to order Char Kway Teow from a Fried Rice stall. First of all, it’s tastes and looks nothing like PENANG Char Kway Teow as it’s too sweet and localized to local taste buds. Only a few strands of sad chives and few slices of Chinese Sausage. The only saving grace is that there’s wokhei.

Really hidden gem off the main strip. Damn solid fried rice. Well seasoned, pork chop with a bit to char. For just $7! +1$ for egg. Chef used the right rice, likely day old, perfectly separate grains. Egg was perfectly fried and runny. Better than many tzechar fried rice! Def give it a try.. Deserves more biz given the quality.
